Some days you want a full-on dinner spread… and some days you just want a warm bowl of something cozy that hugs your soul. That’s where congee comes in.

This plant-based version is silky, comforting, and super customizable. Think of it as the ultimate blank canvas: creamy rice porridge topped with savory mushrooms, ginger, scallions, and a little drizzle of sesame oil. It’s the kind of meal that feels gentle on the stomach but still packed with flavor.

In this house, it’s also my “everybody grab a bowl and add your own toppings” dinner. Low effort, high comfort. Mom win.


🛒 Ingredients

  • 1 cup jasmine rice

  • 7 cups vegetable broth (or water + bouillon)

  • 1 inch fresh ginger, sliced

  • 2 cloves garlic, smashed

  • 1 tbsp soy sauce or tamari

  • 1 tsp sesame oil

  • 1 cup mushrooms, sliced (shiitake or cremini work great)

  • Salt & pepper to taste

Optional Toppings (Highly Recommended)

  • Sliced green onions

  • Chili oil or chili crisp

  • Toasted sesame seeds

  • Crispy fried garlic

  • Cubed tofu (pan-seared or baked)

  • Fresh cilantro

  • Lime wedges


👩‍🍳 Instructions

  1. Rinse the rice under cold water until the water runs mostly clear.

  2. In a large pot, combine rice, vegetable broth, ginger, and garlic.

  3. Bring to a boil, then reduce heat to low and simmer uncovered for about 30–35 minutes, stirring occasionally.

  4. The rice will begin breaking down and turning into a creamy porridge texture. If it gets too thick, add a splash of broth or water.

  5. While the congee cooks, sauté mushrooms in a small pan with a little oil and a pinch of salt until golden.

  6. Remove ginger slices and garlic from the congee if you prefer a smoother texture.

  7. Stir in soy sauce and sesame oil. Taste and adjust salt if needed.

  8. Ladle into bowls and pile on your favorite toppings.
