Cozy Plant-Based Asian Congee
🍚 Cozy Plant-Based Asian Congee
Total Time: 40 mins | Prep: 5 mins | Cook: 35 mins | Serves: 4
Some days you want a full-on dinner spread… and some days you just want a warm bowl of something cozy that hugs your soul. That’s where congee comes in.
This plant-based version is silky, comforting, and super customizable. Think of it as the ultimate blank canvas: creamy rice porridge topped with savory mushrooms, ginger, scallions, and a little drizzle of sesame oil. It’s the kind of meal that feels gentle on the stomach but still packed with flavor.
In this house, it’s also my “everybody grab a bowl and add your own toppings” dinner. Low effort, high comfort. Mom win.
🛒 Ingredients
1 cup jasmine rice
7 cups vegetable broth (or water + bouillon)
1 inch fresh ginger, sliced
2 cloves garlic, smashed
1 tbsp soy sauce or tamari
1 tsp sesame oil
1 cup mushrooms, sliced (shiitake or cremini work great)
Salt & pepper to taste
Optional Toppings (Highly Recommended)
Sliced green onions
Chili oil or chili crisp
Toasted sesame seeds
Crispy fried garlic
Cubed tofu (pan-seared or baked)
Fresh cilantro
Lime wedges
👩🍳 Instructions
Rinse the rice under cold water until the water runs mostly clear.
In a large pot, combine rice, vegetable broth, ginger, and garlic.
Bring to a boil, then reduce heat to low and simmer uncovered for about 30–35 minutes, stirring occasionally.
The rice will begin breaking down and turning into a creamy porridge texture. If it gets too thick, add a splash of broth or water.
While the congee cooks, sauté mushrooms in a small pan with a little oil and a pinch of salt until golden.
Remove ginger slices and garlic from the congee if you prefer a smoother texture.
Stir in soy sauce and sesame oil. Taste and adjust salt if needed.
Ladle into bowls and pile on your favorite toppings.
🧠 Mom Tips
🍚 Extra creamy hack: Stir the pot often during the last 10 minutes. It helps the rice break down into that classic silky congee texture.
🥣 Leftover magic: Congee thickens in the fridge. Just add broth or water when reheating.
🥢 Kid-friendly bowl: Skip the chili oil and let the kids add toppings like tofu cubes or sesame seeds.
⏰ Busy night shortcut: Use leftover cooked rice and simmer it in broth for about 15 minutes. Boom—instant congee.
🥣 Why I Love It
This is one of those quiet comfort meals that always shows up when you need it. It’s nourishing, budget-friendly, and endlessly customizable depending on what’s in the fridge. Plus, when the weather cools down or somebody in the house needs a little tummy love, a warm bowl of congee just feels like the right move.
Simple ingredients. Big comfort. Exactly the kind of meal busy moms keep in their back pocket.
