This is one of those "throw it together while helping with
spelling homework" kind of dinners. It’s cozy, cheesy (without actual
cheese), and comes together with pantry staples. It’s also my go-to when I want
a no-fuss dinner that still feels like comfort food.
🛒 Ingredients
- 8 oz pasta (any kind—penne,
shells, or gluten-free works!)
- 1 cup unsweetened plant-based milk (like oat or almond)
- 1/4 cup nutritional yeast
- 2 tbsp flour
- 2 tbsp vegan butter or olive oil
- 1 tsp garlic powder
- Salt & pepper to taste

- Boil the Pasta
Cook pasta according to the package. Drain and set aside. - Make the Sauce Base
In a saucepan, melt vegan butter and whisk in the flour to make a roux. - Add the Good Stuff
Slowly add plant milk, whisking constantly to avoid clumps. Stir in nutritional yeast, garlic powder, salt, and pepper. - Toss and Serve
Once the sauce thickens (about 5 minutes), toss in your cooked pasta. Mix well and serve hot!
