🛒 Ingredients
- 1 tbsp coconut oil
- 1/2 onion, sliced
- 2 garlic cloves, minced
- 1 tbsp grated ginger (or 1/2 tsp
ground)
- 1 tbsp red curry paste (adjust to
taste)
- 1 can coconut milk
- 2 cups veggie broth
- 1 cup mushrooms, sliced
- 1/2 red bell pepper, sliced
- 1/2 block tofu, cubed
- Juice of 1 lime
- Fresh cilantro + chili flakes

- Sauté Your Base
In a large pot, heat the coconut oil. Sauté onion, garlic, and ginger for about 3–4 minutes until fragrant. - Flavor Bomb
Stir in the red curry paste and cook for 1 minute more. Your kitchen will already smell like heaven. - Build the Broth
Pour in the coconut milk and veggie broth. Stir, then bring to a gentle simmer. - Add Veggies & Tofu
Toss in mushrooms, bell pepper, and tofu cubes. Let simmer for 10–12 minutes. - Finish with Lime
Add fresh lime juice and taste for seasoning. Top with cilantro and a sprinkle of chili flakes if you're feeling bold.
