This soft, slightly sweet bread is a Jamaican classic! It’s not made with actual coconut meat, but with coconut milk—hence “Coco” bread. Traditionally, it's brushed with butter and folded for that signature layered look. We’re keeping it fully plant-based and just as irresistible.

  1. Activate that yeast:
    In a bowl, combine warm water, warm coconut milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.

  2. Mix the dough:
    In a large bowl, whisk together flour and salt. Add the yeast mixture and melted vegan butter. Mix until a shaggy dough forms.

  3. Knead it out:
    Turn the dough onto a floured surface and knead for 8–10 minutes until smooth and elastic. (You can use a mixer with a dough hook too.)

  4. First rise:
    Place the dough in an oiled bowl, cover with a clean towel or plastic wrap, and let it rise in a warm spot for 1 hour or until doubled in size.

  5. Shape the breads:
    Punch down the dough and divide it into 8 equal pieces. Roll each into a circle (about 6–7 inches wide), brush one half with melted vegan butter, and fold over to form a semi-circle.

  6. Second rise:
    Place folded breads on a parchment-lined baking sheet. Cover loosely with a towel and let rise for 20–30 minutes.

  7. Bake:
    Bake in a preheated 350°F (175°C) oven for 15–18 minutes, or until puffed and lightly golden.

  8. Brush with love:
    Immediately brush the tops with more vegan butter while warm. Serve hot and fluffy!
