Peanut Noodle Salad (Cold or Warm!)

Noodle salad is the answer to “What can I make ahead, eat cold, and still feel full and happy?” It’s creamy, crunchy, nutty, and loved by both adults and kids in my house.


🛒 Ingredients


👩‍🍳 Instructions

  1. Cook the Noodles
    Boil rice noodles according to package. Drain and rinse with cold water.
  2. Make the Sauce
    In a bowl, mix peanut butter, soy sauce, sesame oil, maple syrup, and garlic until smooth.
  3. Toss Everything Together
    Combine noodles, sauce, carrots, and cucumber. Toss well.
  4. Chill or Serve
    Serve cold, or slightly warm if you prefer.
