Peanut Noodle Salad (Cold or Warm!)

Noodle salad is the answer to “What can I make ahead, eat cold, and still feel full and happy?”
It’s creamy, crunchy, nutty, and loved by both adults and kids in my house.
🛒 Ingredients
- 6 oz rice noodles
- 2 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp maple syrup
- 1 clove garlic, minced
- 1/2 cup shredded carrots
- 1/2 cup chopped cucumber
👩🍳 Instructions
- Cook the Noodles
Boil rice noodles according to package. Drain and rinse with cold water. - Make the Sauce
In a bowl, mix peanut butter, soy sauce, sesame oil, maple syrup, and garlic until smooth. - Toss Everything Together
Combine noodles, sauce, carrots, and cucumber. Toss well. - Chill or Serve
Serve cold, or slightly warm if you prefer.

a rainbow bowl.
- 💧 Loosen It Up: If it thickens in the fridge, just stir in a
splash of water before serving.
