🛒 Ingredients:

1 cup medium- or short-grain rice

1½ cups water

3–5 whole cloves

1 slice fresh ginger or ½ tsp ground ginger

1 can (13.5 oz) full-fat coconut milk

1 cup coconut cream or oat milk (for creamier texture)

½ cup brown sugar or coconut sugar

¼ tsp salt

¼ cup raisins (optional)

Ground cinnamon, for topping

Soak the rice:
Rinse rice until water runs clear. Soak it in warm water for 30 minutes, then drain. -
Infuse the flavor:
In a saucepan, combine water, cinnamon stick, cloves, and ginger. Bring to a boil, then simmer 10 minutes. Remove cloves and cinnamon stick before adding rice. -
Cook the rice:
Add soaked rice to the infused water and cook over low heat until most water is absorbed—about 15 minutes. -

Stir in coconut milk, coconut cream/oat milk, sugar, and salt. Stir frequently to avoid sticking. Add raisins if using. -
Simmer slow:
Continue cooking on low, stirring often, until mixture thickens to a pudding-like consistency—about 25–30 more minutes. -
Finish strong:
Remove from heat. Serve warm or chilled, topped with ground cinnamon.
