Tembleque is basically the Puerto Rican version of panna cotta, but way better (don’t @ me). It’s rich, creamy, wiggly, and lightly spiced with cinnamon. Traditionally made with coconut milk, it’s already dairy-free—but this version keeps it simple, fully vegan, and just sweet enough to hit that dessert craving without a sugar crash.

  1. Combine the base:
    In a saucepan, whisk together both cans of coconut milk, sugar, salt, vanilla, and cinnamon until fully combined. Keep the heat off for now.

  2. Add cornstarch:
    Whisk in the cornstarch before turning on the heat to avoid lumps. Make sure it’s smooth-smooth—no gritty bits allowed!

  3. Cook it slow:
    Turn the heat to medium and cook, stirring constantly (yes, keep stirring!), until the mixture thickens to a pudding-like texture—about 7–10 minutes.

  4. Pour & chill:
    Remove from heat and pour into small ramekins or a lightly greased mold. Smooth the tops with a spatula and let it cool slightly before refrigerating.

  5. Set it up:
    Chill in the fridge for at least 3 hours or until fully set and jiggly like flan.

  6. Serve:
    Unmold (if you're feeling fancy) or serve straight from the dish. Dust with cinnamon or top with a little toasted coconut.
