This recipe gives you both: the authentic, Middle Eastern–style falafel (no canned chickpeas here, only the real deal) and the creamy, tangy tahini sauce that makes it sing. Perfect stuffed in pita, loaded with veggies, or just eaten hot out the fryer while nobody’s looking (no judgment).

For the Falafel:

  1. In a bowl, whisk tahini, lemon juice, garlic, and salt.

  2. Slowly whisk in cold water until smooth and creamy. Adjust thickness as needed.

  3. Taste + tweak with extra lemon, garlic, or spices.
