Vegan Spinach & Artichoke Dip (Creamy, Cheesy, Crowd-Pleaser)

You know that one dish at the party everyone mysteriously gathers around? This is it. Creamy, cheesy, garlicky, and warm enough to make you forget you’re supposed to be “saving room for dinner.” This vegan spinach & artichoke dip tastes so indulgent, no one will guess it’s dairy-free — unless you brag about it, which you totally should.
🛒 Ingredients

1 tbsp olive oil

½ medium onion, finely chopped

3 cloves garlic, minced

1 (14 oz) can artichoke hearts, drained & chopped

5 oz fresh spinach (or 1 package frozen spinach, thawed & squeezed dry)

1 cup raw cashews (soaked 12-24 hrs, then drained) or save time with roasted cashews soaked in hot water for 20 minutes instead.

1 cup unsweetened plant milk (soy or oat for creaminess)

½ cup vegan cream cheese (Kite Hill, Tofutti, or try our homemade recipe)

½ cup vegan mayonnaise (Follow Your Heart or Just Mayo, or try our homemade recipe)

½ cup nutritional yeast
-
1 tsp lemon juice
-
1 tsp salt (adjust to taste)

½ tsp black pepper

Optional: ½ cup shredded vegan mozzarella for extra cheesiness
👩🍳 Instructions

Sauté the flavor base: In a large skillet, heat olive oil over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook 1 more minute.

Add spinach & artichokes: Stir in spinach until wilted (or warmed through if frozen). Add chopped artichoke hearts and cook another 2–3 minutes. Remove from heat.

Blend the cream: In a blender, combine soaked cashews, plant milk, vegan cream cheese, vegan mayo, nutritional yeast, lemon juice, salt, and pepper. Blend until completely smooth.

Mix & bake: Stir the blended cream into the spinach-artichoke mix. If using vegan mozzarella, fold it in now. Transfer to an oven-safe baking dish.

Bake: Bake at 375°F (190°C) for 15–20 minutes, until bubbly and hot.

Serve hot: With crackers, toasted bread, tortilla chips, or straight from the dish with a spoon (I won’t tell).
