Sometimes you just need a sausage that can hang with your gumbo, sit next to your pancakes, or get tossed into a skillet for tacos — without mystery ingredients or breaking the bank. This plant-based sausage is my go-to when I want smoky, savory, “I-can’t-believe-it’s-vegan” vibes. And the best part? You can whip it up with pantry staples and zero fancy equipment.

  1. Mash the Base: In a large bowl, mash the cooked lentils with a fork or potato masher until mostly smooth (a little texture is okay).

  2. Mix the Dry Stuff: Add vital wheat gluten, breadcrumbs, nutritional yeast, smoked paprika, fennel seeds, thyme, black pepper, and salt. Stir to combine.

  3. Bring It Together: Mix in garlic, soy sauce, olive oil, and about ½ cup of veggie broth. Stir until it forms a soft but firm dough. If it feels dry, add more broth a tablespoon at a time.

  4. Shape the Sausages: Divide the dough into 6 portions. Roll each portion into a sausage shape. Wrap each one tightly in foil like a candy wrapper (this helps them hold shape while steaming).

  5. Cook: Place the wrapped sausages in a steamer basket over simmering water. Steam for 30 minutes. Remove from heat and let cool slightly before unwrapping.

  6. Serve & Enjoy: Sear in a skillet with a little oil for that golden brown finish, or slice and add straight into your gumbo, pasta, or breakfast plate.

  • 🌶️ Flavor Flex: Add crushed red pepper or a dash of hot sauce to the mix if you like a spicy sausage.
