Easy Vegan Peach Cobbler (Two Ways — Because Options Matter)

🍑 Easy Vegan Peach Cobbler (Two Ways — Because Options Matter)

Total Time: 45–55 minutes
Prep: 10 minutes
Cook: 35–45 minutes
Serves: 6–8

Okay, so listen — I love a classic pour-over cobbler where the batter rises through the peaches like it’s trying to show off. BUT sometimes? Sometimes you want that real-deal crust sitting proudly right on top like it owns the place. So I decided… why not give my readers both? Because if nobody else is gonna spoil you, at least your cobbler should.

🛒 Ingredients

Peach Filling

Classic Batter-Style Cobbler Base

Optional Top-Crust Version

(Use this if you want a crust baked directly on top of the peaches)

  • 1 ½ cups all-purpose flour

  • 3 tbsp sugar

  • 2 tsp baking powder

  • ½ tsp salt

  • ¼ cup cold vegan butter, cubed

  • ½ cup oat or almond milk (plus 1–2 tbsp more if needed)

👩‍🍳 Instructions

1. Make the Peach Filling

  1. Preheat your oven to 350°F.

  2. In a skillet, warm the peaches with sugar, cinnamon, nutmeg, vanilla, lemon juice, and cornstarch.

  3. Let it cook 3–4 minutes until the syrup thickens slightly.

2A. Version One — Classic Pour-Over Cobbler (Batter on Bottom, Peaches on Top)

(The original magic-layer cobbler)

  1. Whisk flour, sugar, baking powder, and salt.

  2. Stir in milk until smooth.

  3. Pour the melted vegan butter into your baking dish.

  4. Pour the batter right over the butter — don’t stir.

  5. Spoon the peaches (and syrup!) over the batter. Again — don’t stir.

  6. Bake 35–40 minutes until golden and bubbling.

2B. Version Two — Top-Crust Cobbler (Peaches on Bottom, Crust on Top)

(More like a Southern-style cobbler with a biscuit-style top)

  1. Pour your cooked peaches into a baking dish.

  2. In a bowl, whisk flour, sugar, baking powder, and salt.

  3. Cut in the cold vegan butter until the mixture looks like coarse crumbs.

  4. Add milk and stir gently until you have a soft biscuit-style dough.

  5. Drop spoonfuls of dough over the peaches OR flatten pieces with your hands for a more even top.

  6. If you’re feeling extra, sprinkle cinnamon sugar on top.

  7. Bake 40–45 minutes until the crust is golden brown.

🧠 Mom Tips

  • 🍨 Mandatory: Serve warm with vegan vanilla ice cream.

  • 🥄 Frozen peaches = more syrup = a juicier cobbler.

  • ✂️ For the top-crust version, don’t overmix the dough — you want it tender, not tired.

  • 🔥 Brush the top crust with a little plant milk + sugar for that “oh she fancy” shine.

🥣 Why I Love It

No matter which version you go with — batter or top crust — this cobbler gives “summer energy” even if you made it during a chaotic week when everybody keeps asking you what’s for dinner before you even put your keys down. It’s simple, cozy, and just sweet enough to reset your entire mood.
